نقدم لكم اليوم طريقة عمل الشيخ محشي اللذيذ جداً. وهو من الوصفات السورية الفاخرة. وهو أحد أنواع المحشي الشهية، لكنه سمي باسم الشيخ محشي نظراً لمكوناته الأغنى ولأنه كان يُقدم في العزائم والولائم الكبيرة. عزيزي القارئ، ما عليك إلا جلب المكونات واتباع الخطوات الوضحة بدقة وستحصل على طبق مميز من الشيخ محشي وستشعر بالفخر لنجاحك في تحضير هذه الوصفة الفاخرة. فاجئ من تحب بها وخاصة محبي المحشي بأنواعه.
ستحتاج إلى:
- 1 كيلو كوسا محفورة ومصفاة من الماء
- 1كيلو لحمة مفرومة
- 2 حبة بصل متوسط الحجم
- 1/2 كوب صنوبر مقلي أو شرائح فستق مبشورة ومقلية (حسب الرغبة)
- 5 كوب لبن رائب
- بيضة
- 1 ملعقة كبيرة نشا
- ملح (حسب الرغبة)
- 1 ملعقة صغيرة بهارات مشكلة (يمكنك التقليل حسب الرغبة)
- فلفل أسود (حسب الرغبة)
- 2 ملعقة كبيرة زيت زيتون أو سمنة (يمكن استبدالها بزيت الذرة)
- زيت ذرة للقلي
الخطوات:
أولاً:
قطّع البصل إلى قطع صغيرة، ثم ضع في مقلاة مناسبة الحجم زيت الزيتون أو السمنة أو الزيت النباتي (حسب الرغبة). ودع البصل يتحمر قليلاً. ثم أضف اللحم المفروم إلى البصل وقلّب جيداً إلى أن يتغير لونها قليلاً، ثم أضف الملح والبهارات المشكلة والفلفل الأسود (حسب الرغبة). ثم قلّبها جيداً، ودعها تتحمر وتنضج تماماً. ثم دع الحشو يبرد، ثم اخلطها بثلاثة أرباع كمية الصنوبر أو شرائح الفستق المقلية.
ثانياً:
قم بحشو حبات الكوسا بالحشوة المحضرة مسبقاً. ثم قم بقلي الحبات في زيت نباتي إلى أن تتحمر جيداً. ثم صفيها من الزيت، وضعها على ورق نشاف إلى أن تمتص الزيت الفائض.
ثالثًاً:
حضّر اللبن، وذلك بتذويب النشا في اللبن البارد، واخلطه مع البيضة في الخلاط أو باستخدام خفاقة يدوية، لكن يُفضل استخدام الخلاط. ثم ضع الخليط في قدر على النار، وقلّب جيداً حتى يغلي قليلاً. ثم ضع حبات الكوسا المقلية بحذر في قدر اللبن، ثم دعهم يغلوا قليلاً لمدة 10 دقائق تقريباً. وأضف الملح حسب رغبتك. ثم ارفع القدر عن النار. واسكب في طبق التقديم كمية مناسبة وزينه بالمتبقي من الصنوبر أو شرائح الفستق المقلية. وقدّمه بجانب الأرز الأبيض. واستمتع والذين تحبهم بالطعم اللذيذ.
